Slice of Life Saturday’s ~ Healthy snacking, Raw food, & Dinner Dates

Well, hello, March! I didn’t expect you this early, but now that you’re here, I’d like some warmer weather. Can you get on that? Thanks!

I attended a rockin’ healthy snacking party hosted by the lovely Amber of Mama’s Blissful Bites on Sunday. I learned all sorts of new things. I now know the definition of raw food. I learned that the word healthy is relative and varies in meaning. I can now say that I like healthy food, and that it doesn’t taste like cardboard. Matter of fact, it’s really, really tasty. Amber made this walnut feta dip that was out-of-this-world delicious. If I didn’t have to be on my best adult-like behavior, I would have fleed the scene with the dip and not shared it with a soul.

Because seeing Amber on Sunday just wasn’t enough, we scheduled a dinner date on Thursay to talk about life, food, and our websites. It was so much fun. We ate a ton of delicious food and split a decadent dessert. I ate so much that I had to unbutton my jeans on the way home. I brought her some samples of some new raw bites that I made… She loved them! I can’t wait to share the recipe with all of you.

I’m about to get organized. I just ordered a Life Planner from Erin Condren. Not only am I going to get organized, but I’m going to do it in style. I’m not the most organized person in the world; I realize that. I blame it on the fact that my office is under construction, but, really, I’m just not good at organizing my life. Shh, don’t tell Squirrel or my office will never get finished. I keep blaming my lack of organization on my nonexistant office to make him feel bad in hopes that he’ll speed up the construction process. It’s not working. He’s privvy to my manipulating ways. I strive for organization, but things always end up in piles on my dining room table. I’m the kind of person that keeps information stored in my brain. I’m horrible at writing things down, unless, of course, it’s a recipe or cooking technique. My blog is getting busy, so it’s important that I start getting organized so I don’t lose my mind or miss something important.

I have a ton of exciting recipes scheduled. Here’s a sneak peek at what’s to come: brown butter butterscotch butter pecan ice cream, cranberry-almond raw bites, blueberries & cream oatmeal cookies, and a special guiness milkshake to celebrate St. Patty’s Day. I’m so excited for all of you.

Here’s what I pinned this week:

Roasted Cinnamon-Maple Peanuts by Mama’s Blissful Bites- I had these peanuts at Amber’s healthy snacking party on Sunday, and they are AMAZING! They’re so good!  Like, eat-the-entire-bowl-without-realizing-it good. Like, go-back-for-more good. Yup, I’ll be making these to keep around for healhty snacking.

Look what I made:

Unfortunately, I had a busy week and didn’t do much cooking. Shame on me. Maybe next week!

On the menu:
