Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 2 tsp active dry yeast
  • 1/2 cup warm milk
  • 1/4 cup unsalted butter, melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup blueberries
  • 1/2 cup soft cheese (such as cream cheese or ricotta)

Instructions

  1. In a large mixing bowl, combine the flour, sugar, salt, and yeast.

  2. In a separate small bowl, mix together the warm milk, melted butter, eggs, and vanilla extract.

  3. Gradually pour the wet ingredients into the dry ingredients and mix until a dough forms.

  4. Knead the dough on a lightly floured surface for about 5 minutes, until it becomes smooth and elastic.

  5. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.

  6. Preheat the oven to 350°F (180°C) and grease a loaf pan.

  7. Punch down the dough and roll it out into a rectangle on a lightly floured surface.

  8. Spread the soft cheese evenly over the dough, leaving a small border around the edges.

  9. Sprinkle the blueberries over the soft cheese.

  10. Starting from one long side, tightly roll the dough into a log shape.

  11. Carefully transfer the log into the greased loaf pan, tucking the ends underneath.

  12. Cover the pan with a kitchen towel and let the babka rise for an additional 30 minutes.

  13. Bake the babka in the preheated oven for 40-45 minutes, or until golden brown and cooked through.

  14. Allow the babka to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing and serving.
