How To Make Cauliflower Mac & Cheese

Ingredients
- 1 large head of cauliflower, cut into small florets
- 2 cups of shredded cheddar cheese
- 1 cup of milk
- 2 tablespoons of butter
- 2 tablespoons of all-purpose flour
- 1 teaspoon of garlic powder
- 1/2 teaspoon of paprika
- salt and pepper to taste
Instructions

Preheat your oven to 375°F (190°C).

Bring a pot of salted water to a boil and cook the cauliflower florets for about 5 minutes, until they are slightly tender. Drain and set aside.

In a separate saucepan, melt the butter over medium heat. Stir in the flour and cook for 2 minutes, until it forms a paste.

Slowly whisk in the milk, garlic powder, paprika, salt, and pepper. Cook for another 5 minutes, stirring constantly, until the sauce thickens.

Remove the saucepan from heat and stir in 1 1/2 cups of shredded cheddar cheese, until melted and smooth.

In a baking dish, combine the cooked cauliflower and the cheese sauce. Mix well to coat the cauliflower evenly.

Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top of the cauliflower mixture.

Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and golden brown.
