How To Make Cauliflower Mac & Cheese

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients

  • 1 large head of cauliflower, cut into small florets
  • 2 cups of shredded cheddar cheese
  • 1 cup of milk
  • 2 tablespoons of butter
  • 2 tablespoons of all-purpose flour
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of paprika
  • salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).

  2. Bring a pot of salted water to a boil and cook the cauliflower florets for about 5 minutes, until they are slightly tender. Drain and set aside.

  3. In a separate saucepan, melt the butter over medium heat. Stir in the flour and cook for 2 minutes, until it forms a paste.

  4. Slowly whisk in the milk, garlic powder, paprika, salt, and pepper. Cook for another 5 minutes, stirring constantly, until the sauce thickens.

  5. Remove the saucepan from heat and stir in 1 1/2 cups of shredded cheddar cheese, until melted and smooth.

  6. In a baking dish, combine the cooked cauliflower and the cheese sauce. Mix well to coat the cauliflower evenly.

  7. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top of the cauliflower mixture.

  8. Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and golden brown.

  9. Serve hot and enjoy!
