How To Make Navy Bean Soup with Ham

Ingredients
- 1 cup dried navy beans
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves of garlic, minced
- 1 bay leaf
- 1 tsp dried thyme
- 4 cups chicken broth
- 2 cups diced cooked ham
- Salt and pepper, to taste

Rinse the navy beans and soak them in water overnight. Drain before using.

In a large pot, heat some olive oil over medium heat. Add the diced onion, carrots, celery, and garlic. Cook until the vegetables are softened.

Add the soaked navy beans, bay leaf, dried thyme, and chicken broth to the pot. Bring to a boil, then reduce heat and let simmer for about 1.5 hours or until the beans are tender.

Remove the bay leaf from the pot. Using an immersion blender or a regular blender, blend about half of the soup until creamy. Alternatively, you can use a potato masher to mash some of the beans.

Stir in the diced ham and let the soup simmer for another 15 minutes. Season with salt and pepper to taste.
