Ingredients

  • 1/2 cup sliced cauliflower
  • 1/2 cup sliced carrots
  • 1/2 cup sliced celery
  • 1/2 cup sliced bell peppers
  • 1/4 cup sliced jalapenos
  • 1/4 cup sliced banana peppers
  • 1/4 cup sliced pepperoncini peppers
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon crushed red pepper flakes
  • 1 cup white vinegar
  • 1 cup water
  • 2 tablespoons salt
  • 1 tablespoon sugar

Instructions

  1. In a large jar, combine cauliflower, carrots, celery, bell peppers, jalapenos, banana peppers, pepperoncini peppers, garlic, oregano, basil, and crushed red pepper flakes.

  2. In a small saucepan, bring white vinegar, water, salt, and sugar to a boil. Stir until the salt and sugar dissolve.

  3. Pour the hot vinegar mixture over the vegetables in the jar, making sure they are fully submerged. Allow the mixture to cool to room temperature.

  4. Once cooled, cover the jar and refrigerate for at least 24 hours before serving.

  5. Serve as a condiment with sandwiches, antipasti platters, or atop grilled meats and vegetables.
