Method

  1. Measure the Rice Chex cereal into a very large mixing bowl; set aside.

  2. In a medium microwave-safe bowl, combine the chocolate chips, peanut butter, and butter. Microwave on high for 30 seconds, stir, and repeat until the mixture is completely smooth and melted.

  3. Stir the vanilla extract into the chocolate mixture until combined.

  4. Pour the warm chocolate mixture over the cereal. Using a large rubber spatula, gently fold the cereal until every piece is thoroughly and evenly coated with chocolate.

  5. Place half of the powdered sugar into a large gallon-sized resealable plastic bag. Carefully add the chocolate-coated cereal, then top with the remaining powdered sugar.

  6. Seal the bag tightly, leaving some air inside, and shake vigorously until the cereal is well-coated and white.

  7. Spread the mixture out onto a large sheet of parchment paper or a baking sheet to cool completely. This prevents clumping.

  8. Once cooled, toss in the candy corn, Halloween M&Ms, and candy eyeballs. Mix gently to distribute and serve immediately or store in an airtight container.
