Method

  1. Prepare the chicken by cutting it into bite-sized 1-inch pieces and patting them dry to ensure a good sear.

  2. In a medium bowl, whisk together the soy sauce, honey, rice vinegar, minced ginger, minced garlic, and sesame oil until well combined.

  3. Heat a tablespoon of neutral oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook until browned on all sides, approximately 6 to 8 minutes.

  4. Pour the prepared sauce over the chicken. Reduce the heat to medium and let it simmer for 5 to 7 minutes until the sauce reduces and becomes thick and glossy.

  5. If you prefer an extra thick glaze, mix the cornstarch with a teaspoon of water and stir it into the bubbling sauce for the last minute of cooking.

  6. Remove from heat and garnish with plenty of sliced green onions and toasted sesame seeds before serving over steamed rice.

Notes

Use chicken thighs instead of breasts for a much juicier result that won't dry out in the glaze.

Don't crowd the pan when browning the chicken; cook in two batches if necessary to get that nice color.

If you want some heat, add a teaspoon of red chili flakes or a dollop of sriracha to the sauce mixture.

Grating the ginger instead of mincing it allows it to melt into the sauce for a smoother texture.
