Method

  1. Pour the red wine, pomegranate juice, and honey into a large, heavy-bottomed pot or Dutch oven.

  2. Slice the orange into rounds and add them to the pot along with the cinnamon sticks, star anise, and cloves.

  3. Place the pot over medium heat and warm until it reaches a very gentle simmer. Do not let it come to a full rolling boil, as this will evaporate the alcohol and make the spices taste bitter.

  4. Reduce the heat to the lowest setting and let the flavors infuse for at least 20 minutes.

  5. Stir in the brandy (if using) and taste for sweetness, adding another spoonful of honey if you prefer a sweeter drink.
