Method
Place the cookies in a food processor and pulse until they become fine crumbs. Transfer to a bowl and stir in the melted butter until the mixture looks like wet sand. Reserve 2 tablespoons of these crumbs for the topping.
Press the remaining cookie crumbs firmly into the bottom and up the sides of a 9-inch pie plate. Place the crust in the freezer for 15 minutes to set.
Take the ice cream out of the freezer and let it sit on the counter for about 15-20 minutes until it is soft enough to stir but not completely melted.
In a small bowl, toss the sliced strawberries with the granulated sugar. Let them sit for 10 minutes until they become glossy and juicy.
