The Best Fudgy White Chocolate Cherry Brownies Recipe

Method

  1. Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving a little overhang on the sides to make lifting them out easier.

  2. In a large microwave-safe bowl, melt the butter. Stir in the granulated sugar while the butter is still warm until the mixture looks like wet sand.

  3. Add the eggs one at a time, whisking vigorously after each addition until the batter looks glossy. Stir in the vanilla extract.

  4. Sift the cocoa powder, flour, and salt into the bowl. Use a spatula to fold the dry ingredients into the wet ones until just barely combined—don't overwork it!

  5. Gently fold in the dried cherries and about half of the white chocolate chunks.

  6. Pour the batter into your prepared pan and smooth the top. Sprinkle the remaining white chocolate chunks over the surface.

  7. Bake for 25 to 30 minutes. You want the edges to be set but the center to still have a very slight wobble. A toothpick should come out with a few moist crumbs attached.

  8. Let the brownies cool completely in the pan before lifting them out and slicing. This is the hardest part, but it ensures you get those clean, fudgy squares.
