Method

  1. Preheat your oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

  2. Attach the paddle attachment to your KitchenAid stand mixer. Add the softened butter, cookie butter, and brown sugar to the bowl. Mix on medium speed for about 2-3 minutes until the mixture is light, fluffy, and well combined.

  3. Add the egg and vanilla extract to the bowl. Mix on low speed until just incorporated, scraping down the sides of the bowl as needed.

  4. In a separate small bowl, whisk together the flour, oats, baking soda, and salt. With the mixer on its lowest setting, gradually add the dry ingredients to the wet ingredients. Mix until just combined; do not overmix.

  5. Remove the bowl from the mixer and use a sturdy spatula to fold in the cinnamon chips by hand.

  6. Transfer the dough to the prepared baking pan. The dough will be thick and sticky, so use a lightly greased spatula or damp fingers to press it into an even layer.

  7. Bake for 23-26 minutes. The edges should be golden brown, and the center should look set but still slightly soft. Do not overbake or they will lose their chewiness.

  8. Allow the bars to cool completely in the pan on a wire rack before lifting them out by the parchment paper and slicing into 16 squares.

Don't skip the parchment paper; the cookie butter makes these bars quite sticky while warm.

For extra texture, toast your oats in a dry skillet for 3-5 minutes before adding them to the batter.

If you can't find cinnamon chips, you can substitute white chocolate chips mixed with 1 tablespoon of ground cinnamon.

Use old-fashioned oats rather than quick oats for a better, heartier chew.
