Funky Monkey Grilled Cheese with Peanut Butter and Bacon
This sandwich is a wild, messy, and absolutely glorious mashup of childhood favorites and late-night cravings. We are talking thick brioche loaded with salty peanut butter, ripe bananas, and crispy bacon, all held together by a surprising hit of melted sharp cheddar.

Method
Lay out the brioche slices and spread a generous layer of peanut butter on one side of each slice.
On four of the slices, layer the banana slices evenly over the peanut butter. Drizzle a tiny bit of honey over the bananas if you want that extra hit of sweetness.
Top the bananas with two strips of cooked bacon per sandwich, then sprinkle a thick layer of shredded cheddar cheese over the bacon.
Close the sandwiches with the remaining brioche slices, peanut butter side down.
Generously butter the outside of each sandwich. Heat a large pan over medium-low heat.
Place the sandwiches in the pan and cook for about 3-4 minutes per side. Go low and slow here; you want the cheese to melt and the peanut butter to get gooey before the bread burns.
Once the bread is deep golden brown and the cheese is oozing, remove from the heat. Let them sit for one minute before slicing so the insides do not slide out.
Notes
Use very ripe bananas with brown spots for the best flavor and natural sweetness.
Don't turn up the heat too high; brioche has a high sugar content and burns much faster than regular white bread.
For a cleaner bite, chop the bacon into smaller pieces before adding it to the sandwich.
If you find cheddar too sharp, try using Fontina or Havarti for a milder, creamier melt.
