Method

  1. In a large mixing bowl, stir together the rolled oats, peanut butter, honey, ground flaxseed, mini chocolate chips, and vanilla extract.

  2. Mix thoroughly until the dough is consistent and the honey and peanut butter have coated all the dry ingredients.

  3. Cover the bowl and place it in the refrigerator for 30 minutes. This helps the oats hydrate and makes the mixture much easier to handle.

  4. Once chilled, scoop about a tablespoon of the mixture at a time and roll between your palms into 1-inch balls.

  5. Place the finished balls into an airtight container. They are ready to eat immediately or can be stored in the fridge for up to two weeks.
