Method
Prepare your fruit by cutting a fresh pineapple into bite-sized chunks and slicing the limes into thin rounds. Place the fruit at the bottom of a large glass pitcher.
Pour the bottle of white wine, pineapple juice, white rum, and triple sec over the fruit. Use a long spoon to give everything a gentle stir so the flavors begin to marry.
Place the pitcher in the refrigerator and let it chill for at least 2 to 4 hours. This wait time is essential—it allows the pineapple to soak up the alcohol and the wine to take on the tropical sweetness of the juice.
Just before serving, clap the mint leaves between your hands to release their oils and stir them into the pitcher.
Top the mixture with chilled club soda or sparkling water for a bit of fizz.
Pour into glasses filled with plenty of ice, making sure each guest gets a few pieces of booze-soaked fruit.
Notes
Use frozen pineapple chunks instead of ice cubes to keep the drink cold without diluting the flavor.
Choose a dry white wine like Sauvignon Blanc to balance the natural sweetness of the pineapple juice.
If you prefer a sweeter drink, add a tablespoon of agave nectar or simple syrup, but taste it after chilling first.
Don't add the sparkling water until the very last second so you don't lose the carbonation.
