Method

  1. Place four martini glasses in the freezer for 10 minutes to get them properly chilled.

  2. In a large cocktail shaker, combine the vanilla vodka, pineapple juice, and maraschino cherry syrup with a generous handful of ice.

  3. Shake the mixture vigorously for at least 20 seconds until the outside of the shaker feels very cold to the touch.

  4. Strain the mixture evenly into the four chilled martini glasses.

  5. Slowly pour 1 ounce of chilled prosecco or sparkling wine over the back of a spoon into each glass to add a layer of bubbles.

  6. Drop a maraschino cherry into the bottom of each glass and garnish the rim with a fresh pineapple wedge.

Notes

To get that classic 'upside down' look, pour the cherry syrup in last if you want a gradient effect, or shake it in for a consistent pink hue.

Always use chilled sparkling wine; if it's warm, it will kill the bubbles and the temperature of your drink.

If you don't have vanilla vodka, you can use plain vodka and add a tiny drop of high-quality vanilla extract to the shaker.

Rim the glasses with a mix of granulated sugar and a pinch of cinnamon for a 'baked crust' flavor profile.

Questions

Can I make this cocktail ahead of time?
You can mix the vodka, pineapple juice, and cherry syrup in a pitcher up to 4 hours in advance. However, do not add ice or the sparkling wine until you are ready to serve.
What is the best sparkling wine to use?
A dry Prosecco (Brut) is best because it balances the sweetness of the pineapple and vanilla.
Is this drink very strong?
It is a standard martini strength, similar to a Cosmopolitan. The juice and bubbles make it go down very smoothly, so enjoy responsibly!
Can I make a non-alcoholic version?
Yes! Swap the vanilla vodka for a splash of vanilla syrup and extra pineapple juice, then top with sparkling white grape juice or ginger ale.
