Forget those sad, lonely chips with a drizzle of fake cheese. These are the nachos you deserve: a massive sheet pan piled high with seasoned beef, black beans, and a mountain of gooey melted cheese, finished with all the fresh toppings that make a party feel like a celebration.

Method
Pre-heat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or foil for easy cleanup.
In a skillet over medium-high heat, brown the ground beef until fully cooked. Drain the excess fat—this is crucial to prevent soggy chips. Stir in the taco seasoning and a splash of water, simmering for 2 minutes.
Lay half of your tortilla chips in an even layer on the prepared baking sheet. Sprinkle with half of the beef, half of the black beans, and half of both cheeses.
Repeat with a second layer of chips, beef, beans, and the remaining cheese. Creating two layers ensures every chip gets some love.
Place the pan in the oven for 10-12 minutes, or until the cheese is bubbling and just starting to brown at the edges.
Remove from the oven and immediately top with diced tomatoes, pickled jalapeños, and red onion if using.
Finish with dollops of sour cream and a generous handful of fresh cilantro. Serve directly from the pan while screaming at the television.

Grate your own cheese from a block; pre-shredded cheese is coated in potato starch and doesn't melt nearly as well.
