Method
In a medium bowl, mix together the softened cream cheese, sour cream, and Italian seasoning until smooth and combined. Spread this mixture evenly across the bottom of a small (2 to 3-quart) slow cooker.
Sprinkle half of the shredded mozzarella over the cream cheese layer.
Pour the marinara sauce over the mozzarella, spreading it gently with a spoon to ensure full coverage.
Top with the remaining mozzarella, the grated parmesan, and the mini pepperoni slices.
Cover and cook on LOW for 2 hours, or until the cheese is completely melted and bubbly around the edges.
While the dip is finishing, preheat your oven to 400°F (200°C). Slice the baguette into 1/2-inch thick rounds.
In a small bowl, whisk together the melted butter and minced garlic. Brush one side of each bread slice with the garlic butter and place them on a large baking sheet.
Toast the bread in the oven for 8-10 minutes until golden brown and crisp.
Serve the dip warm directly from the slow cooker with the toasted garlic bread on the side for dipping.
Notes
Always use full-fat cream cheese; low-fat versions tend to separate and become watery in the slow cooker.
If you notice condensation building up on the lid, place a paper towel under the lid (not touching the food) to absorb moisture.
Feel free to add other pizza toppings like diced green peppers, black olives, or cooked Italian sausage.
For a bit of heat, sprinkle red pepper flakes over the pepperoni layer before cooking.
