30-Minute Sausage Mushroom Ragu (Home Kitchen Style)

This ragu is my go-to when I want a meal that feels like a warm hug without spending hours at the stove. The combination of savory Italian sausage and earthy mushrooms creates a deep, complex flavor that is absolute magic over your favorite wide noodles or creamy polenta.

Method

  1. In a large heavy-bottomed pan, brown the Italian sausage over medium-high heat, breaking it up with a wooden spoon into small crumbles until it is no longer pink.

  2. Add the diced onion and sliced mushrooms directly into the pan with the sausage fat. Cook for about 8-10 minutes, stirring occasionally, until the mushrooms have released their liquid and turned a deep golden brown.

  3. Clear a small space in the center of the pan and add the tomato paste and garlic. Stir them in that spot for 1 minute until the paste smells toasted and the garlic is fragrant.

  4. Pour in the red wine to deglaze the pan. Use your spoon to scrape up all the brown bits (the fond) from the bottom—that is where the secret flavor lives.

  5. Stir in the crushed tomatoes and dried oregano. Reduce the heat to low and let the sauce simmer gently for 15-20 minutes while you cook your pasta in a separate pot of salted water.

  6. Once the pasta is al dente, transfer it directly into the ragu using tongs. Add a splash of the starchy pasta water and toss everything together for a minute to help the sauce cling to the noodles. Serve with a generous dusting of Parmesan cheese.

Notes

Don't rush the mushrooms; let them truly brown rather than just softening to unlock their umami flavor.

If you don't want to use wine, a splash of beef broth with a teaspoon of balsamic vinegar works as a great substitute.

Save your pasta water! That liquid gold helps the ragu emulsify and coat the pasta perfectly.

Use a mix of mushrooms like shiitake or oyster if you want a more complex, earthy profile.

Questions

Can I make this ragu in advance?
Absolutely. Like most sauces, it actually tastes better the next day. Keep it in the fridge for up to 3 days and reheat gently on the stove.
Does this recipe freeze well?
Yes, it freezes beautifully. Let the sauce cool completely and store it in an airtight container for up to 3 months. Just freeze the sauce separately from the pasta.
What is the best pasta for this ragu?
I recommend wide, flat noodles like pappardelle or tubular shapes like rigatoni because they hold the chunky bits of sausage and mushroom the best.
Can I use ground pork instead of sausage?
You can, but you will need to add more seasoning like fennel seeds, red pepper flakes, and extra salt to mimic the flavor profile of Italian sausage.
