Method
Pat the chicken thighs dry with paper towels and season both sides generously with salt and black pepper.
In a large wide pan, heat a splash of oil over medium-high heat. Place the chicken skin-side down and cook for 7-8 minutes until the skin is deep golden and crispy. Flip and cook for another 5 minutes, then remove the chicken and set aside on a plate.
Drain all but about a tablespoon of the chicken fat from the pan. Add the butter and the mushrooms. Sauté the mushrooms for 5-6 minutes until they have released their water and turned a beautiful dark brown.
Stir in the minced shallots and thyme, cooking for another 2 minutes until the shallots are translucent and fragrant.
Pour in the chicken stock to deglaze the pan, using a wooden spoon to scrape up any flavorful brown bits stuck to the bottom.
Lower the heat to medium and stir in the heavy cream and Dijon mustard until well combined.
Return the chicken and any accumulated juices back into the pan. Simmer gently for 8-10 minutes, or until the sauce has thickened slightly and the chicken is cooked through.
Garnish with a little extra fresh thyme or parsley and serve immediately.
Notes
Don't crowd the pan when browning the mushrooms; give them space so they sear rather than steam.
If your sauce is too thick, splash in a little more chicken stock to reach your desired consistency.
Use 'Moutarde de Dijon' for the most authentic flavor—it provides a specific sharpness that regular yellow mustard lacks.
Always pat your chicken dry; moisture is the enemy of a good golden crust.
