Method

  1. Prepare the syrup by combining the cranberries, sugar, water, and 4 thyme sprigs in a small saucepan over medium heat.

  2. Simmer the mixture for about 8 to 10 minutes, or until the cranberries have burst and the liquid has thickened slightly and turned deep red.

  3. Remove the pan from the heat and let the syrup cool completely. Once cool, strain through a fine-mesh sieve, pressing on the solids to extract all the juice.

  4. Fill four highball glasses with ice cubes.

  5. To each glass, add 1.5 ounces of gin, 1 ounce of fresh orange juice, and 1 ounce of the prepared cranberry-thyme syrup.

  6. Stir the mixture gently with a long spoon to incorporate the syrup.

  7. Top each glass with club soda until full.
