  • 4 slices whole wheat bread
  • 2 ripe avocados
  • 4 large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 lemon, juiced

Instructions

  1. Preheat the oven to 375°F. Place the bread slices on a baking sheet and toast until crispy.

  2. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork and mix in the lemon juice, salt, and black pepper.

  3. Heat a non-stick skillet over medium heat. Crack the eggs into the skillet and cook for 2-3 minutes until the whites are set but the yolk is still runny.

  4. To assemble, spread a generous layer of mashed avocado on each toast slice. Top with a cooked egg and sprinkle with additional salt and black pepper if desired.
