Decadent Chocolate Dipped Biscoff Pillow Cookies Recipe
These cookies are a cookie-butter lover's dream, featuring a tender, melt-in-your-mouth dough wrapped around a molten Biscoff center. Each pillow is finished with a luxurious dip in melted chocolate for the ultimate balance of warm spice and cocoa richness.

Method
Scoop 18 small teaspoons of Biscoff spread onto a tray lined with wax paper. Freeze these for at least 30 minutes until solid.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
Gradually stir in the flour and baking soda until a soft dough forms. Do not overmix.
Take a tablespoon of dough, flatten it in your palm, and place a frozen Biscoff dollop in the center. Fold the dough around the Biscoff to seal it completely, forming a ball.
Place dough balls on a baking sheet and chill in the refrigerator for 15 minutes. Preheat your oven to 350°F (175°C).
Bake for 10-12 minutes until the edges are just set but the centers remain soft. Allow to cool completely on a wire rack.
Melt the dark chocolate chips with coconut oil in 30-second intervals in the microwave until smooth. Dip half of each cooled cookie into the chocolate and place back on the wax paper to set.
Notes
Make sure the Biscoff dollops are completely frozen before stuffing, otherwise they will melt into the dough while handling.
A small sprinkle of flaky sea salt over the wet chocolate dip takes these to the next level.
If the dough feels too sticky to handle, chill it for 20 minutes before attempting to wrap the Biscoff centers.
Store these in an airtight container; they actually get even softer and more 'pillowy' on the second day.
